Work in the vines is governed by observing the environment and employing all the senses to the full. The grower must know how to adapt, and to remain humble in the face of nature.
Master Pruners Simonit&Sirch accompany us in the vineyard, notably at the crucial stage of pruning, in Cordon de Royat. The aim is to ensure the longevity of our old vines, all produced by massal selection, and help them achieve the best possible balance between vegetative growth and productivity.
EARTH AND NATURE
We adhere to the principles of biodynamics in the vineyard with the goal of respecting living matter, the soil and the environment, the forces of energy, and Nature. We have to be attentive to the weather, the seasons, and the lunar calendar. Our objective is to successfully transmit the energy of the vines into the wine.
TRANSMITTING THE ENERGY OF THE VINES INTO THE WINE
In the cellar we practice minimum intervention, the winemaking is as simple and natural as possible. We strive to maintain the purity of the fruit, which means fewer and fewer new barrels with the unique goal of giving voice to the terroir. Ageing is long, with two winters in the cellar being necessary to allow the wines to stabilize naturally.
