Vineyard

Grape variety: Aligoté.

Surface: Sous le Chatelet (0.24 ha) and Fontaines de Moule (0.2252 ha) at Auxey-Duresses.

Planted: Between 1932 and 1962 for Sous le Chatelet, and 1949 for Les Fontaines de Moule.

Soil: Limestone clay.

Orientation: North.

Soils are tilled then grassed over. Minimum treatments. Manual harvest with systematic sorting. Precise choice of harvest date based on maturity checks.

 

Vinification

Long, gentle pneumatic pressing, followed by overnight settling.

Alcoholic fermentation takes place partially in stainless steel vats. The wine is then transferred – 50% into used barrels, 10% into new barrels, and 40% into ceramic amphorae – for malolactic fermentation and maturing for 12 months.

It is then racked into stainless steel vats and aged for a further 6 months before bottling.
