The site was noted in a land register in 1507 as En Belange. A natural spring of pure water is found here, where the earth is very chalky. The name is derived from the Celtic BEL, meaning “light-colored.” As language evolved, Ez Blanches replaced older names, describing the white marl soil.
Vinification
50% whole bunch vinification
Cold pre-fermentation maceration, followed by 15 days in vat
Aged in oak barrels (20% new) for 18 months, then racked into stainless steel vats before bottling
